so you simulate both Mac and Windows GUIs with a XML-RPC driven set of calls.

Right. Java's Swing toolkit can present a Mac (on the Mac), Windows, Motif, and Java's own "Java Look and Feel". Interfacing XML-RPC to Swing should be relatively easy to do with the Java XML-RPC implementation.
