My old favorite was Eta-Carinae, one of those stars that's really not going to be a star for much longer. (http://oposite.stsci.edu/pubinfo/pr/96/23/A.html)

But WOW.

The eskimo nebula is incredible.

Hemos is right. Images are better when they can be used as wallpaper.

That completely justifies the billios that we've spend on it. The good science is just a side benefit. :>
