I am not sure why New Zealand is the default - but here's how you can change it.

Open the people.["#tools"].editPersonalInfo script in htmlInterfaces.root and look for the following line:

addTextBox ("Country", "country", "New Zealand")

Replace New Zealand with whatever default value you prefer. Or if you don't want to use any default value, modify that line to read:

addTextBox ("Country", "country")
